Meatballs
3/4 lb lean ground beef
1/2 lb ground veal
1/4 ground pork
1 and 1/2 cups soft bread crumbs
1 cup light cream
1/2 cup chopped onions
1 tbsp butter
1 egg
1/4 cup finely snipped parsley
1 and 1/2 tsp salt
1/4 tsp ginger
1/4 tsp allspice
1/4 tsp freshly ground pepper
1/4 tsp nutmeg
Sauté onions in pan with melted butter. Add light cream to bread crumbs and soak for a few minutes. Combine the spices with the bread crumbs, add egg and sautéed onions.
Mix well. Add the three ground meats and mix well.
Roll the meat mixture into small size balls and brown in pan on stove top.
Gravy may be made from the drippings from the fried meatballs.

Swedish Brown Beans
1 lb canned red kidney beans
1 tsp salt
1/4 cup apple cider vinegar
1/4 cup corn syrup
1/4 cup molasses
1/4 cup brown sugar
stick of cinnamon
This recipe can be made with pre-soaked beans or canned beans.
In a pot, add the following ingredients and simmer on the stove top for an hour.

Stuffed Cabbage
1 head of cabbage
1 lb. ground beef (lean)
1 cup cooked rice
1 small onion, chopped
2 tbsp butter
1 egg, beaten
½ tsp pepper
½ tsp celery salt
½ tsp allspice
1 cube beef boullion in cup of water
1/4 cup brown sugar
Cut core of cabbage head. Place in pot of water and bring to a boil.
Simmer until leaves separate easily, about 10 minutes. Drain thoroughly and remove 8 to 10 of the outer leaves.
Cut thin slice from thick center vein of each leaf.
Sauté onion in butter. Mix well the ground beef, cooked rice, onion, egg, pepper, salt, celery salt and allspice . Divide meat mixture evenly on the prepared leaves, fold sides of leaves over meat and roll loosely. Add cabbage rolls to pan with butter and brown on all sides about 20 minutes. Add boullion dissolved in water to the pan, cover tightly and simmer for about an hour or until rolls are tender.
Sprinkle brown sugar over the top for the last 15 minutes of cooking.
